Quick Help Needed...please

if i frosted a cake tonight with crusting bc can i leave it until tomorrow to smooth it with the viva paper towel? or will it crust too much? i've been up since 4:00 am and my eyes are closing and i feel i might mess it up if i keep working on it. thanks for any help.

if you leave it too long, it will still smooth tomorrow but it will look kind of umm lumpy.. in my experience. i've tried to go back and resmooth some areas after i've left it over night or for several hours... and i don't tend to get the results that I want. You really only need to let the cake sit for 15-20 minutes before you viva it. You can't wait that long? or maybe hold off on icing it until tomorrow if you haven't already done it

thanks for the reply noley. i guess i'll try to do it tonight- but if i can't get it right i'll finish tomorrow- it's for a friend and it's free so i'm not too worried. thanks again!

It's probably too late, but I often can use the viva method on a freshly iced cake if it's medium to stiff consistancy. I only have to wait a couple minutes and start smoothing away!

If you wait overnight, the buttercream will crust over completely and when you attempt to smooth it, it will have a crackled appearance to it.

If it does become too hard to smooth just let it sit out to room temp and add another bc layer. I'd think it would be ok. Sweet dreams icon_smile.gif
