Hello,

I just joined your group and I have enjoyed reading everyone's ideas and successes. I have come to realize that I need to learn A LOT! The first thing I need to learn to do is how to make the tops of round cakes flat. Do I cut the tops off? Do I just pile the frosting on? What should I do?

Thank you for taking the time to answer.

Hello Annette, welcome to CC. What you are asking about is called "leveling" and you'll get several different ideas on how to level your cakes. I usually just take a nice long, sharp knife to level mine, it is really just a sneaky way to taste the cake! If you don't level, by one method or another, you can have cracking cakes, layers that slide, etc., so it is pretty important to do.

I won't try to explain the other methods, I haven't used them, but I'm sure somebody will come by soon and tell you about them. vj

Wilton makes a cutter... that's what I use .. or you can use a knife .. just cut of the rounded part .. then I flip that part down onto my board, then put icing on it icon_smile.gif Welcome aboard!! You're gonna love it here icon_smile.gif

Thank you so much for getting back to me. I thought I just had to level off the tops, but I wasn't sure if I was maybe doing something wrong. I will look into the knife that wilton sells.

I have already enjoyed reading so much wealth of information. I honestly didn't know there was so much to cake decorating.

Thanks again,
Annette

I do. I always turn the cut side down and ice the bottom.-less crumbs

Annette, I saw something on one of the forums that I found really interesting when it comes to leveling a cake..... I saw that someone put a board with a weight on to of the cake, which kind of smooshed it level. Personally, I just use the Wilton leveler (taught wire) and give what ever comes off to the kids (gets them off my back about having some cake).
