I received a cake order for a sheet cake cut into 2x2 squares. There will be no icing on the sides of the cake. Just on top with a music note on each square. The crust will be cut off. How will I keep the outside of the cake from drying out? The rest of the cake will still be together but already cut. I have never done anything like this. She told me not to do petite fours because it would be time consuming. She did not want to put alot on me. Any comments are welcome and thanks in advance.

I just did cake squares this weekend, but mine had the icing on the sides as well as the top. If she's not trying to make more work for you, I think it's easier to have the sides iced.
I ice my cakes first, then cut into squares with fishing line, then I pipe over the cuts (which are only hairline).
Good luck

Definately would ice the sides to keep from drying out.

could you put an acetate band same depth as cake and icing all round the cake sides?

sorry, I didn't mean putting acetate around each individual square but around the whole cake before it was separated.
