Hi, I am looking for a recipe to make a simple cream/mousse like strawberry filling. I would like to use fresh berries and it will be paired with a white cake and covered in buttercream. Thanks!

You know what I use is super simple and everyone loves it. It is just whipped cream, whip it stiff, then fold in strawberry preserves. You can use this alone or you can put a layer of fresh sliced strawberries as well, I usually put them on top.

Thank you, how is it to cut? Does it hold it's shape or kind of mush out the sides when you cut it. It is for a wedding cake and I am not sure if they will have it outside or inside but it will be kept refrigerated before, Thanks!

Here's a strawberry cream filling that uses cream cheese. It holds up a pit better for slicing.

Strawberry cream

2 cups chopped strawberries
1/4 cup sugar
1 (8 ounce) package cream cheese, softened
1/4 cup powdered sugar

Combine the strawberries and sugar and chill, anywhere from an hour to overnight. Drain excess water from strawberries and sugar. In mixing bowl, blend cream cheese and powdered sugar until smooth. Stir in reserved strawberries.
