My Fondant Is Dry

Hi,

I made my first two batches of MMF today, one was the regular MMF and the other was a batch of chocolate MMF, both recipes from here. Both recipes called for about 8 cups of powdered sugar. However by the time I got to using the 6th cup of sugar my fondant was super hard, cracking and dry...even when I tried to heat it just a bit. My chocolate one is really stiff and dry. Am I supposed to use all 8 cups? Because how would I do that wouldn't my fondant be like a rock, and I don't think I could last very long trying to knead it!

I don't think most of us use all 8 cups; maybe 6-7. Also, add about 1/3 cup of Crisco to the recipe, and also some to the mixing bowl, and then your hands when you knead it. I think your batches can be salvaged: soften them in the microwave for a few seconds, then knead in the Crisco (smear some on your kneading mat or table, too). I think you'll be pleased with the results! Keep us posted and let us know how it works out.

Can you tell me what the purpose it is to let it "rest" overnight? Or is there any reason why you couldn't use it right away.

You can use it after it rests for at least a few hours, but overnight is better. It needs to rest so that it will bind together better and provide structure. Hope this helps.

You know whenever I try making my own fondant and gumpaste it never comes out either. Its usually too sticky and if its not sticky its lumpy! (I do sift the sugar and sprinkle the gelatin so its not that!) Ive tried three different recipes and never have any luck! With all the conf. sugar I go through its more cost effective for me to buy it.

I'm glad you asked this. I haven't tried making MMF yet but I want to because I hear it tastes much better and I bet this is an issue I would have come across too. Thanks!

No problem! If you can find a recipe it works for you let me know! Im sure it would be cheaper to make it if it actually worked for you!

Thanks, I won't have time for it to rest today...have to have a cake this evening...nothing like waiting until the last minute. I am attempting to get the chocolate MMF to work, but so far it's still pretty crumbly, it's getting better, but I doubt it's going to get much smoother. I am covering a small cake with it so it shouldn't be too bad. My MMF seems to have faired better and it's not as dry, should work for my accents no problem. Nothing fancy just an opportunity to try out the fondant and make another cake.

Thanks for the welcome, I have been a member for a few months, but haven't really "talked" much on the forums. I love being about to seeing all the great cakes, there are many decorators who have amazing cakes! I do ok with my decorating, but I need to perfect the inside. I haven't been very please yet with the actual cakes. Have a lot of recipes to try from here!

I sure hope so! Now I am trying to get the fondant on the cake and it keeps tearing! But I haven't quite given up yet...but if I knead anymore I may not be able to use my arms and hand to finish the rest of the cake!

Humm, maybe I should have stuck to roses... icon_lol.gif

LOL. I know! And the next day you can barely make a fist!! If its still too dry you might add a little royal icing to it to make it wet. Or if at all else fails you can use the royal icing for a spackle job!!
If it still doesnt work....grab a fork, a glass of wine, and call it a night!

icon_lol.gif Cake tasted awesome and so did the little roses I made from the chocolate fondant. Everyone loved it. I ended up not using the fondant to cover the cake! I will post a pic tomorrow, I to tired to download it!

Awh! You poor thing! But Ive been there! Thats why I stopped trying to make it because it never worked for me. Especially when you have an order and your pressed for time. I always make sure I have a container on hand just for emergencys. I dont have anywhere local to buy my supplys so its crucial for me to keep it on hand.

Ok, so here are the results. I ended up taking the chocolate MMF and making chocolate roses. They taste great! The cake it's self tastes great, as well as my frosting. Fortunately I had plenty of frosting to add more when I realized that I was going to have to forgo the MMF. I used a cake mix extender for this and I loved the result. Not too heavy, but not so moist it crumbles. The strawberries gave it some color! I tried to make larger ribbon roses, but they just wouldn't keep their shape. LOL! Ok, not a complete loss, but a good lesson for the future!

Looks good to me! Yah that chocolate fondant reminds me of a tootsie roll. Well atleast the Chocopan I buy does. I was never crazy about the taste of fondant or buttercream for that matter. I do like whipped cream frosting though. But you cant get the results you get from fondant.
Who was the cake for, a client or family?

Thanks! I am not quite that good to have clients yet! Someday I will be brave enough to actually get clients!

It was for a ladies fellowship with my Bible Study Group from church. I am trying to take advantage of every opportunity to make a cake now that I have invested in so many supplies due to my Wilton Classes. ( And due to my Wilton class, get better at something other than "The Wilton Way!" ) I love this forum because it's gives me a lot of ideas how to improve my decorating skills! icon_biggrin.gif

And by the way, weirkd, your cakes are really great and very unique! thumbs_up.gif

I started with Wilton also but their fondant isnt really good. I watched a lot of Food Network to get ideas and taped them. Then I did an internet search and found some suppliers.
I started by baking cakes for coworkers birthdays and everyone kept telling me that I needed to go into catering. So when I stopped working to stay home with my two daughters I decided to try to do it to earn extra money. I have a friend that ordered baby shower cakes and cookie party favors and then some of her family ordered from me. But so far its more of a hobby. Im trying to get more business by doing flyers. But you will get there!!
