Can You Freeze Buttercream

I just read on the web-site where someone said that you could freeze buttercream. Is that true. I have been throwing so much away because I would make so much and refrig for two weeks but would later have to disgard it because I would not either have a cake within that period or they would like a differnt flavor . I have a wedding cake to do this week and I know am going to have a lot of buttercream left any suggestion.

Absolutely! It will keep for months in the freezer. Just put it in an airtight container then pop in the freezer!

I can't belive I could have been making my buttercream and freezing it ahead of time. Again, I can make large amount and freeze and it will taste the same when i whip it .

Yes, absolutely. I do it all the time. In fact, last time I froze some extra yellow buttercream. Then one day I needed some green. So I took out some of the yellow from the freezer, whipped it up, added a little blue coloring -- and there was my green buttercream -- in a matter of 10 minutes.

I always have some white in the freezer. That way if I am doing a cake and need just a little bit more I don't have to whip up a whole new batch.
