I have wondered the same myself. I have only worked with MMF and it seems to look dull. I use cornstarch to keep it from sticking when rolling and I then brush the excess off, but it still does not have the look I want.

You could paint on luster dust. In my photos I have an anniversary cake that I did fondant teardrop pearls.

With fondant you can buff the cake with your hands, makes it smoother and a little bit shiny. If you grease your hands (very lightly) with a dab of crisco for the last buff, it brings out the shine more, but it doesn't really get extremely shiny.

I agree with cake deco - pearl luster dust will make fondant really shiny. I've used it on many of my cakes.

Good Luck!

Rolled buttercream is shiny when you use it on a cake, and it gives a look similar to rolled fondant also.
