have to do an elmo cake for a party just wante to know if the cake mix extender will be too much batter for the character pan?

i really don't want too much over . thank diamondsmom

The cake mix extender recipe that I use makes about 7 1/2 cups of batter. You will need to check the instructions for how much the elmo pan needs (I dont have it but I suspect maybe it holds 1 box mix which would be about 5 cups) I'd just make cupcakes with the leftover if you have it. You could even decorate them to match (like elmo, cookie monster etc. I have seen some cute ones in the gallery) I can usually make about 12 cupcakes with leftover batter (about 2 1/2 cups).

ok thanks alot merissa. yeah the elmo tin holds 5 cups so i'll do some cupcakes . diamondsmom

When I have extra batter I make a little 6" layer and freeze it in a ziplock bag. These make great gifts for lots of occasions. Good use for extra icing too! LOL

This is THE BEST recipe I have found for far.

1 package any flavor cake mix to which you add all of the ingredients called for on the box.
In addition:
1 cup flour
3/4 cup sugar
1 tsp. baking powder
1/2 oil or butter (I use butter-really yummy!)
2/3 cup water or milk (I use milk)
I also add 1 tsp of vanilla and 1 tsp of almond but that is optional

Since I use butter I beat the butter first, then add all of the ingredients on box and then all of the other ingredients. beat on low for 1 min, scrape down bowl (especially important if you use butter) beat on med for 2 minutes. I find this recipe takes a few more minutes to bake than usual, but not a lot. it makes about 7 1/2 cups batter. It is the moistest cake I have ever made-
