I've had the same trouble as you in the past. It is also hard to write on pieces when they are dry (like a banner/swag), so I have started writing on the fondant with Americolor gels and a tiny, tiny paint brush. The brush seems a bit easier for me to control. It takes longer than a "pen", but it doesn't "spread out" or "bleed" as much.

yeah i would! i didnt on the mothers day cake in my pic and i wasnt very pleased with the effect. now what i do is keep a bit of the fondant i trim off (so its the same thickness as whats on the cake) and i write on that before i touch the cake. that way i know its safe to do it!
I've used the pens on my cakes and the first time it dragged on the fondant.
I now write on it straight away as long as the fondant isnt too soft, but do it really really gentle, then go over it the next day once the fondant has hardened. That way I find you get a good even coverage on the letters.
