Yes, I use it quite a bit. The one at sugarcraft is bettercreme in quart containers. You have to whip it. If you have a sam's near you, you can get it prewhipped from the bakery department. I think sugarcraft is the only place you can order it online though.
Has anyone made large batches of buttercream and frozen it?
I do this all the time
me too..I always make double batches of buttercream and freeze some.
When I use Rich's everybody raves! In fact they say it's less sweet than other icings and prefer it. I guess it's a matter of taste.
One thing though..When I get it from Sam's, it's in a large bucket (like the size of a 5 gallon paint bucket) and if you don't have the room in your freezer, you'll have to put it in smaller containers.
hey, I'm interested - for those of you who buy it from Sam's, how much does it cost, how long does it last and does it need refridgeration? thx.
At the Sams I go to in Concord, NC it cost like 22.00 for a bucket of the prewhipped. (I forgot how many lb's it is but it is like a 5 gallon bucket) I work at a grocery store bakery and we use this stuff all the time, they tell us to keep it in the fridge and the opened bucket will last 14 days (usually longer) and unopened in the freezer it will last up to a year. Now that is just what my work guidelines are so it may be a longer shelf life. If you buy it at Sams make sure when you go to the bakery you tell them BETTERCREAM and not BUTTERCREAM, last time I went they was trying to give me the buttercream instead of the bettercream. There was another thread about Richs bettercream a while back and here is what I posted in that thread I hope this information helps!
The only thing about this bettercream is keep the bucket (If you buy it from Sams) in your fridge and only take out the amount you think you will need to ice the cake when you are ready to ice it. The bettercream in the bucket cannot sit out for long periods of time because it will get a thick airy consistency, and it will have a lot of air bubbles and it will be impossible to get smooth once it gets warm. If you leave the whole bucket sitting out and it gets warm and gets the thick airy consistency I dont know of anything you can do to get it back to the creamy texture it was when it is first opened. This icing is really yummmmmy on cake and it is actually easy to make roses with it. But if you put to much coloring in the bettercream it can get really runny and you wont be able to make roses, so usually pastel colors are best if you are using bettercream.

I buy this bettercream at GFS (gordon food service) they sell it in like a milk carton. Or half of one- I don't know what size it is. I keep it in the freezer and it lasts forever unopened. I think it is about $3.00
I tried it and I have mixed reviews.
1st- it is kind of on the sweet side...
2nd- you have to be careful not to over whip it and 3rdly like Sonya said you can't leave it outside too long!
This is a good product to use in a pinch!
Oh yea neither Costco or BJ's sell this stuff so I directly order it from a foodservice company.
