katie,
this sounds a little dumb, but likely your best bet is getting some gumpaste and a picture of the animal in the pose you want and just start playing around. you'll be surprised at how good you will do. Don't worry about color - you do that later with food coloring and/or petal dust. Just use your basic tools and your hands and think of it as play-dough

I would suggest searching the web or craft stores for instructions on sculpting with sculpey clay. They have tones of books out their for scupling out of clay and the process is the same with gumpaste or fondant.

I made a cake with squirrels for my son. I found this great website that sells marzipan figures. It might give you some ideas. HTH.

I just made a cow cake with cows made from MMF. There are great directions at pastrywiz.com. They are step by step. I only saw directions for cows, not other farm animals. This will maybe get you started. I have my cow cake posted in my photo section. It was time consuming, but I thought they turned out okay. Good luck!

I did a search on this in cake central last night just to see what I could come up with. I am curious too as to how to make the figurines. I found where someone posted this site and I saved it to my favorites. Perhaps you might find something in here that would help.
