How Long Will A Cake Covered In Mmf Last In The Fridge?

I have a cake due Sun. I have already frosted it, and I want to assemble it today because I have no time after today. I was wondering though... will the mmf last in the fridge or will it be gross. Should I just refridgerate the frosted cakes and find the time to assemble it closer to the date? TIA

I've wrapped MMF in saran wrap, then in foil and then placed that in a tightly sealed ziplock bag and kept it for 2 months and it was still good. I don't refrigerate mine but I've seen other on here say they have before.

If your cake is coated with BC icing and your house is really cool, the cake should be fine. You could refridgerate the cake w/o the fondant on it then apply the fondant either Saturday or Sunday before you deliver or give them the cake. Just make sure the cake is at room temperature before you apply the fondant.

You could cover it in MMF and just leave it in a cool spot in your house! It will be fine on Sunday!

I wasn't sure if the mmf would get soggy (on the cake) being kept in the fridge for a couple days. Thanks again!
