Freezing Cake

How long will a freshly baked un-frosted cake keep in the freezer. I have too many cakes to bake for the weekend and I wanted to get a head start. I always freeze my cakes overnight. I think that it keeps them moist, but I have never done it for several days.

I've had cake frozen for a month and pulled it out (sugar fit LOL) and frosted that hunk and it was moist and delicious when it reached room temp!! As long as you wrap it really well and it doesnt get freezer burn on it you shouldn't have any problems

I've frozen cakes for a week with no problems. But I wrap them in 2 layers of plastic wrap, foil, and put them in 2 plastic bags. Might be overkill, but I feel you can't be too careful.

I was wondering the same thing. I froze a cake a few weeks ago, thinking i would just let my girls use it for decorating but then i needed a cake so i thawed it out, and it felt like i just baked it. it decorated wonderfully but we won't actually eat it until tomorrow so i'm curious as to how it will turn out. this makes me less nervous though. I guess it's a good thing it's only a family thing but still I want it to taste as good as i think it looks.
