I just took an order on a four teired wedding cake that was pictured in one of Martha Stewart's magazine. It has a monogram on it and is in all cream with a gumpaste bow on the top.
The bride wanted fondant, but was scared of the taste. I took her a piece of MMF and she liked it. She told me to go ahead and cover the cakes with MMF unless I feel uncomfortable with it. This is no problem, I think I can do that fine, but what about the trim work? Do you pipe directly onto the MMF? Do you use buttercream or royal icing?
I will also be using a 14" cake dummy. Do I need to coat it with buttercream before the MMF so that it stays glued to the styrofoam?
Any thoughts would be appreciated...Beth
I normally use fondant but have started using MMF. I personally would use royal icing for the trim and writing directly on the cake, as it is what I am used to but I do not see why you can't use bc. I put a layer of bc under the mmf so using it for the trim should be fine aswell. As for the dummy I would coat it with bc so as you say "it stays glued to the styrofoam".
