I don't see a problem with layering sheet cakes, but what do you mean by it came out all "wonky"? I guess I'm not understanding why putting a layer on top of it would help.

it is kind of collapsed on one side... THis is fine because i'm putitng the doll over it or i can even it out with frosting but that layer alone i don't think would work which is y i want to layer it. I'm just not sure if that is too much.

If it were me, i would bake the 2nd layer and see if it comes out better. If it collapses too, then I would level both cakes and layer. If the 2nd layer comes out nice and full, I would just level it and use it alone. You definitely want to level your cakes instead of filling in with icing.

I layer my sheet cakes all the time. When you have to fill, it's way easier to do with two cakes then trying to tort and lift off a thin layer of cake.
