Marzipan And Gumpaste?

Not sure if this is the right board, but here goes!

What is the difference between the two? I made a marzipan recipe and shaped it into some motorcycle parts, but they never got hard like I wanted. How long does it take for it to set and be stiff/hard (or does it?). They were pretty thick pieces, probably a 1/2 to 1 inch around (they were the pipes). Does the gumpaste set harder?

Hi chubbycheeks,

It is my understanding that marzipan consists of finely crushed almonds, egg whites and confectioners sugar. I myself have never made anything with marzipan but I have worked with gumpaste and that stuff dries pretty quick and hard. Maybe it's because one of the ingredients is gum-tex and that makes it dry really quick and super hard.

Yes, my recipe used almond paste, powdered sugar and liquid of some sort (lol, can't remember). Alright, I'm going to play with gumpaste and see if that works!!
