This is a photo of my DH's grandfather in 1918 at a bakery in Kansas City Missouri. My father in-law (man in the middle) said that they made mostly pies there. You can see the nasty looking pie pans laying around. To the right of the photo is what he called the "dough trough." This is where they would have to get down and mix the dough by hand and the let it rise in it. They said that he lived with a severe case of asthma until he passed away, because of inhaling flour all his life. It is an interesting photo to see. Makes ya wonder how the health dept. was back then icon_lol.gif

Wow! How fascinating! I'm looking at what looks like a bare lightbulb and the bare, wooden walls, too. This is a great photo!

I love old photos and this one is a real treasure. Yep, the health departments of today would probably close them down. But I'll bet they made the best darned pies around!

wow, it's amazing to see what conditions they worked in back then. i just can't imagine.

i had an uncle who worked as a baker as well and developed a lung condition from inhaling flour. unfortunately, he passed away after a lung transplant.

learning history this way is very interesting, though. i could just sit and listen to older folks tell stories all day. i would love to see more photos like this.

It is interesting huh.
They also said that his asthma condition was so bad that the only way he could get rest was sitting on his knees the floor with his head resting on the seat of the chair.
I understand that from this bakery, he went on to open his own in Muskogee Oklahoma. My father in-law worked in this bakery until he was drafted in WWII.
If you look to the top left there are wooden sticks with ropes ties to them, he said that this is how the opened the ovens.
Thanks for your great responses icon_wink.gif
