Okay . . . I just made my gazillionth box of SuperMac-n-Cheese. I need some fresh (EASY) ideas for lunch for my three-year-old and my 20 month old. Between Mac-n-Cheese, peanut butter and jelly, cold cuts, quesadillas . . . we just do the same things over and over! They don't seem to mind but I need to change things up a bit. I don't want to try anything overly complicated . . . I save that for dinner. But there has to be other healthy, appetizing options out there for toddlers!
I wish I could help. Seems like grilled cheese and chips is what my kids always want for lunch. They are 4 and 2. Unless we aren't home and then they only want McD's.

Here's somethng that is good, easy, and the kids can help. Make individuals pizzas. You use a small pita bread round, pizza sauce, string cheese, and any toppings they might like. the kids can help by stringing the string chees. Just put a couple of tbsp. of pizza sauce on each pita then let the kids add the cheese and any toppings. Bake at 425 for 7-8 minutes until cheese is melted.
Another way to do little pizzas, that I had growing up and have made now for my kids are to do them on English muffins. Just toast them in the toaster, spread a little sauce or diced tomatoes, sprinkle on some cheese and put under the broiler or in a toaster oven for a few minutes.
I cut out my kid's sandwiches with cookie cutters, which they really liked. I also make a lot of rolled up sandwiches, on tortillas. They think it's so cool. I put baby spinach, turkey, thinly sliced tomatoes, etc, and roll them up.
I always put baby spinach on their sandwiches instead of lettuce. And always mix half and half romaine or iceberg lettuce and baby spinach in our salads. I've always done this, and my girls LOVE spinach.
Veggies cut with a crinkle cutter with dip are also a favorite with my girls. They especially love cherry or grape tomatoes.
I've made mini corn dogs or hot pockets with homemade dough. They can go in the freezer.
I make PBJs with our leftover pancakes. This is a big favorite.
I cut cheese cut in cubes or triangles or various shapes with mini cookie cutters.
Pizza quesadillas are good, and are a little different than the standard.
Taco salad in a little Fritos bag is really easy and good. I also use baby spinach in place of or 50/50 with the lettuce.

I have discovered my son will eat ANY fruit cut up in a bowl with a dash of cake sprinkles on it. I figured I already have them and how much sugar can be in a few sprinkles. I have even added them to corn chex or any no sugar cereal in the morning. The milk becomes the color of the sprinkles and he thinks its cool! ![]()
We cut up veggie sticks and keep in the fridge for dipping.
I actually said the other night...If you finish your piece of pizza you can have more tomatoes. ![]()

I had to do that last night with fried zucchini with my son. He wasn't going to eat anything else but that. Had to tell him he had to finish him meat and potatoes first.
I have a lunch rut too. My 4 year old doesn't like meat except hotdogs. Peanutbutter sandwiches, raw veg, fruit, and mac & cheese are about all he wants. It makes me cook differently for him from the family. We raise cattle for beef so I think he was switched at birth. I don't know how to cook for a vegetarian! My 8 year old will eat almost anything thank goodness.

The kids at the day care where I used to work loved chicken nuggets, mashed potatoes, and corn. When we had this there was a big yeah coming from my 2-3 yr old class. They switched back and forth between instant and real potatoes, used frozen nuggets, and instant gravy so prep was pretty easy. I have some sample menus that I saved somewhere in a box (we just moved) I can find them this week and send them to you if you want. ![]()
KID doable:
ants on a log: celery stuffed w/ peanut butter (or cream cheese) and the sprinkled w/ raisens.
ham and cream cheese roll ups....thick slice or 2-3 thin slices spread w/ cream cheese (get inventive w/ add-ins to cream cheese). can slice to make pin wheels.
pigs in a blanket....hot dog rolled up in crescent roll dough and backed
homemade corn dogs....used thined corn muffin batter..be sure dogs are dry (might even shake in baggie w/ some flour just to be sure)
fluffernutter (only if sugar is NOT a problem) peanut butter w/ marshmallow cream (Fluff) instead of jelly.
when in season, fresh from garden: tomato sandwhich - slices of tomato on bread w/ mayo (and I even do onion sandwhiches when vadalia onions are in season!)
tatar tots w/ diced ham, mushrooms, onions smothered in cheese (micro tater tots for 2 min. then add ham and mushrooom, another min. in micro, then add cheese and micro to melted gooey mess!) (and also do in toaster oven..just be sure to heat tater tots first by themselves)

PARENT should do:
octopus hot dogs....slit hot dog along 2/3s of length into 6 sections and boil. fun to watch the legs curl up.
fried bread: take store bought bread dough...let rise. punch down. pull off a blob. stretch out. put in deep skillet w/ about an inch of oil in it. cook to golden brown, turning once. serve w/ butter and jams/jellies.
when in season, fresh from garden: fried green tomatoes!
