I have an idea but it always changes as I put the cake together. I don't have the kind of vision to "see" something until it is actually before me. I make some decorations and then use them or not depending on the way the cake is going.
How do you do it? Is there a right way? Is there a better way?
Most of the time I have a basic idea of how I want the cake to look, but as I go along changes come with it. Sometimes they are intentional, sometimes not!
There really is no "right" way to decorate a cake. It's an art form. Go with your style and talents. Most customers will really enjoy your personalization of their cake. Their cake will be unique even if the theme is the same as another person's.
As for a better way... what works for you is the best way. Someone might be able to give you tips to make something easier, but your methods will ultimately become dominate anyway.

FOR SOME REASON ( AND I'M NOT COMPLAINING) I SEEN TO HAVE AN EYE FOR SCALE. I'M ABLE TO MAKE MOST OF MY ADD ON DECORATIONS IN ADVANCE AND THEY ALWAYS FIT THE SCALE OF MY CAKES, ESPECIALLY THE 3-D CAKES. BUT BEING ABLE TO HAVE A MENTAL VISION OF WHAT YOU WANT YOUR CAKES TO LOOK LIKE ISN'T ALWAYS A BLESSING. DON'T GET ME WRONG IT REALLY HELPS ME OUT, BUT WHEN YOU HAVE TO GO TO PLAN - B, IT'S LIKE THE CAT STEPPING ON THE REMOTE RIGHT IT THE BEST PART OF THE MOVIE. I JUST FRIES YOUR NERVES FOR ABOUT 30 MINUTES, THEN YOU HAVE TO GET BACK ON TRACK AND GO WITH IT. YOU JUST HAVE TO FIND THE SYSTEM THAT WORKS BEST FOR YOU. LOOK AT OTHER AREAS OF YOUR LIFE...... DO YOU HAVE TO WRITE EVERYTHING DOWN OR ARE YOU ABLE TO JUST WING IT.... DO WHAT COMES NATURALLY FOR YOU. I HOPE THAT HELPS SOME.
I dont' have a "specific" plan. I've always wondered how decorators can give a bride a price when the price list includes a price "per rose". I have no idea how many roses I'm going to put on the cake until I put it together and see where I need to place a rose.
I work from either a general sketch, or a photo the bride has brought in..... as a guideline, as a general idea. But do I know exactly how many flowers to make ahead of time, or exactly where each decoration is going to be placed?
