I have a wedding cake for next Saturday. I have 230 individual cheesecakes, a 9" cheesecake, and then the cakes on the tiers are going to be dummy cakes since it's going to be so hot. How long in advance could I make the dummy cakes, and they still be ok? They're just going to be iced in buttercream, and then topped with strawberries, which I won't put on until I deliver it. I just want to not do it too early and the icing crack.

You can do the dummy cake any time. The buttercream shouldn't crack or mold or anything. It will just harden.
