So I had a customer who wants my lady bug cake, but in a 10 inch instead of a 6 inch. I already have TWO wedding cakes for Sat. so I am crazy for taking on another cake, but I thought I am already knee deep in frosting the additional work is minimal.........

Anywho.... it was a nightmare! The frosting wouldn't stick to the cake! Kept sliding off! the filling was oozing and there were crumbs in the frosting! AFTER I DID A CRUMB COAT AND I USED AN ICING DAM, this should not have happened. There were a lot of crumbs too.... the sides weren't even straight (well duh since the frosting was sliding off). I figure it was too hot, but there are a couple of other options (although it was quite warm, the weather has been pushing 100 around here and I don't have AC), I didn't use Meringue powder since I am low and there was no wilton coupon this week (what a stupid reason) and I also didn't thin down the frosting as much as I should have.... but these are things I've done in the past which makes frosting more difficult but not impossible!

So I scrapped all of the frosting off the sides and used the grass tip to cover the thing in grass so the lady bug was sitting in a garden, actually looked REALLY CUTE and I was excited, until that started to slide off too..... ACK! Guess which section of the cake was sliding off........

omg you poor thing. I have no idea why all that would happen but hope all goes well for you in the end

This week is the cake making from HECK! icon_mad.gif

I redid the part that fell off, it looked sooooo cute! Would be one of my favorite cakes..... but the front fell off AGAIN! icon_cry.gificon_cry.gificon_cry.gif Why in the world would the frosting not stick? There is about a 6 inch by 4 inch section that just won't stay! grrrrrr

Here is the disaster of a wedding cake! I need to have TWO cakes for tomorrow and I am not sure how I am going to repair this one layer! I stuck wooden dowels all in it to try and hold it together, but it seems to just be a disaster! icon_cry.gif


I really need advice on what to do at this point?!!

What is the pink stuff under the green frosting... looks to me like that might be your culprit...

I hate to say this but I think you are gonna have to redo that whole bottom of the wedding cake. That crack is just too much. Dang, time for cake balls I guess. Sorry hun.

Ummm I don't know what to suggest but I had icing sliding off two weekends ago because it was too humid. I used the buttercream dream frosting and the dream turned into a nightmare!!! Thank God it was a freebie. I now use Val's High Humidity Buttercream. I like that taste better than any buttercream I ever tried.

This is a recipe from a fellow CCer (vrmcc1/Val). She posted it when someone was asking about high humidity buttercream. Here's what she said:

Well, the bride called me to tell me she LOVED IT and it was PERFECT. I then emailed my friend who was at the wedding for her HONEST opinion and she said the same thing!!!!!!!!! They must have all been drunk he he. Just goes to prove my rule "Thou shalt not point out or mention any imperfections in the cake until they point it out, since I am probably the only one who noticed" icon_eek.gif

Sorry you had problems with your cake. But it looked great once you finished. I had the same problem with icing this weekend. I had a 5 tier wedding cake, buttercream, covered with fondant daisies. I iced that cake 3 times. In 20 years I have never had that happen to me, and I hope I never have it happen again. Not to keep beating a dead horse, but I think its the crisco problem. I hope the crisco test kitchen is working on this one!!!!!
Maybe they'll let us know something soon.

I had trouble this weekend and couldn't figure out why. I never thought about the Crisco change.

silver dragees on the side, helped to hide a lot!

Also I looted the centerpieces for the petals and was able to hide the divit and other flaws! he he he.

I'm still shocked she loved it. My friend who was there also loved it and I know she would have given me an honest opinion. I told her what issues I was having and she just couldn't believe that I had those problems, no one noticed. God is good, hard to believe I pulled it off without starting over!
