I want to make an ice cream cake for my husband for Father's Day, but I don't want to make it an ice cream sandwich cake.
I read the tutorial, but it is for a sandwich cake. Is there a way to have only one layer of cake, and one layer of cake? Do I use whipped topping to frost it? My hubby doesn't care too much for buttercream.
Any help would be greatly appreciated. I wanted to do this today while he is out of town.
Sure, you can use one layer of each...just be sure to cut carefully around the ice cream and cake, to get as close as possible to the same sizes.
Also--keep it as frozen as possible to "frost" with whipped topping.
I've never used two cake layers...always the way you're going to do it!

I thought that I would bake the cake and then freeze the ice cream in the same pan, lined, to keep them as close to the same size as possible. I am determined to make a good ice cream cake. I have only ever made one cake for my husband, and it was an ice cream cake disaster. I need to find the picture and post it in the "worst cake" thread! ![]()
I'm pretty sure you can but I've only made the sandwich cakes. I would think you could and put the ice cream on the bottom and the cake ontop so it's better to ice. Just make sure it stays frozen so it doesn't slide off. I hope someone with more experience can help you. Good luck! ![]()

I did that, too...but at the time I didn't have the magic line pans (the ones with perfectly straight corners) and I froze my ice cream in the 13x9 pyrex glass baking dish I'd used for the cake. GOBS! It came out looking like a PILLOW!
So, I just took my big ol' chef's knife and "squared" it all off. (My son took the leftovers before I could finish---cake & ice cream!)
It worked out well--just a lil' bit smaller than I'd planned.

I've made an ice cream cake before only from ice cream (no cake) just make sure to keep it frozen. I would take my cake out for 10 mins at a time and then put it back in a while to refreeze. Also I frosted my cake with the Wilton whipped frosting mix. That freezes well, but also can sit out without fear of melting. I had no problems at all spreading that on my cake.

My wife let me speak about this cake, and she's worried, lol. After an absolute nightmare ice cream cake for my birthday, she was determined to beat this. She ended up making the mint chocolate chip ice cream on the bottom with chocolate cake on top with whip-n-top for the icing. It cut like a breeze after the chain saw massacre in January, lol. She really outdid herself. It was wonderful and tasted delicious. I am very proud of her for not giving up. I didn't even want her to make the cake, its not that important for me to have all the fuss. But she made my fathers day a very special one. Great job babe, thanks, I love you.
I used to work at a certain ice cream store (one that carries over 30 flavors) and although the cake came prepared, the strategy would still be the same. Bake your cake, cool, and then freeze. At the store there was a mold that you would place the ice cream on top of the frozen cake, but you could line the pan you used to bake the cake in plastic wrap and fill with ice cream. Once it's frozen hard place on your cake. Ice with Pastry Pride or Rich's BetterCreme (depending on where you are in the country). Decorate with the Pastry Pride or use buttercream. Hope that helps!
