I need help, whenever I make a cake the icing is never smooth. I follow all the directions that you guys post online, using the fondant smoother, Viva, hot knifing and still can't get it. I wonder sometimes is it the icing that I use? I made a cake just on Saturday with Buttercream Dream recipe and it seemed nice and creamy, so I used the icing piper and piped it on. I put in the freezer for a minutes so that it could crust. Took out and tried to smooth and it began making a mess . Somebody please help me a give me some FOOLPROOF instructions.

I've been doing cakes for 25 years. I thought my cakes looks pretty good in the smoothing category (I got lots of comments on how smooth its was). But after using the Melvira Method, I think those past cakes looked like the ridge of the Rocky Mountains!

Are you putting the icing on with the icer tip and not smoothing it at all before you chill it? If you are then there's problem #1. You need to ice with the icing tip and then use a spatula to smooth it out before you let it crust. Then you can try the paper towel method to further smooth it out. If you allow it to crust before you attempt to smooth it the first time you will never get it smooth. If you are not skipping this then just disregard the info, but it didn't sound like you were smoothing it at all by your description.
I use a spackle knife (6") to get most of it smooth, and then I did recently try the Melvira method and it does work very nice! I have to get the hang of doing the sides but my top was great. However I had already gotten it fairly smooth with the spackle knife.
The smoother you can get it before you let it crust, the nicer it will smooth with a Viva or foam roller later.
Try the roller - I can usually roll it and smooth it right out within a couple of minutes. It works great!
I use the icing tip, then hot knife the icing smooth, let it sit to crust, then use the Melvira Method sponge roller to smooth out the last of the marks. It works great!!!! I do this with any type of icing.
So this works well even if the icing was thick or with any icing????
It works fine if the icing is thick... but you do need an icing that crusts.

Agree. I did a cake demo for some 8th graders today (see my thread under Cake Business to see how much fun I had with this!). I iced the cake, layed down my spatual, picked up the roller and smoothed the cake. I'll confess, I was a little nervous since I wasn't giving it any time at all to crust, but I was in a time crunch. It worked great.

Yes!! I've used rollers on fondant, rolled buttercream and even on non-crusting BC.

Mom23kids~~ I brought mine from Walmart. Its in the paint aisle. I brought the 6" foam roller from rubbermaid w/the roller stick both are sold separate I think I spend like $10. Today will be my first time using it.
I bought my roller at Home depot or Lowes, can't remember which. Just make sure you get the hi density foam, I got the 6 and the 2 inch! Love them both!
