Does anyone know what the square chocolates are called? The chocolate place I used to work called them bon-bons. I'm trying to find some good recipes, but I can't figure out what they are called in the "real" world.

Those are bon bons. Actually, even the shaped ones are bon bons. Check out the forums on eGullet. You will probably be able to find your answer there, or be able to post the question and get an answer. There are pastry chefs and candy makers- and home bakers as well. They are very knowledgeable!!!
