Strawberry Fillilng?

I am new to cake decorating and I need a quick filling for a cake tomorrow. Can I use Strawberry Jam or Preserves? Seedless or does it matter? The icing will be all crisco buttercream.

hey,

you can definetly use strawberry preserves. Most people prefer seedless, because they don't like seeds getting stuck in their teeth. If you pipe a "dam" with your icing around the edge of the cake, and just fill with your preserves. That way the preserves doesn't leak out, and cause problems when you're icing the outside of the cake.

I just did a cake filled with seedless strawberry jam. Tried something different, too. I did a thin layer of regular icing on each side of the jam.

In other words, thin layer of icing, create dam around perimeter of bottom layer...then iced bottom of top layer thinly. (Kinda like sandwiching the jam)

Got the feedback on how it went over last night. The jam didn't seep into the cake at all (Which is the exact result I was hoping for icon_biggrin.gif ) It was still "intact" right in between the layers.

And everyone loved it icon_biggrin.gif

If you've already put the filling in, maybe it's something to try next time around.

All I know is that this is how I'll be doing my jam type fillings from now on, cause it worked great.

For my daughters birthday I used strawberry flavored Cool Whip. I normally avoid the stuff at all costs, but found it worked pretty well. I also mixed some sliced strawberries into it. The cake held up very well.
