I am making a bridal dress cake tomarrow. I have baked 2 very full 1/2 sheet cakes that will be layered with filling. Also have 2 half ball cakes (for boobs). I need to carve just a little. Do I put together and freeze some then carve. Or can I just put together and carve. If I put together and freeze or not freeze and carve how do I keep the filling from comming out the side, since my dam will get cut. Not sure if I can put together cut and then take apart again . Hope this makes since. I have never carved but thought this would be fun and easy to carve. Taking to work tommarow night for friday bridal shower. thanks

I will help as much as I can, for carving it is easier if the cake is frozen. For filling I just flavor my buttercream or use a thin layer of fruit preserves.
Since it is a large cake what you can try is carve it without the filling, remove the top layer, make a dam and fill, replace top layer then ice and decorate. Hopefully this helps!

I would think once it is frozen you should be fine. Just don't put lots of icing in between so that it will have nowhere to go.
Make sure too to thaw it in the fridge so that it does not sweat and does not come to room temp too quickly.

I would also say a very thick or 2 crumb coats. If the filling does seep out it will run into that first!
