Is Tonight Too Early To Bake For A Sunday Cake?

I have 1 cake for this Sunday and 2 on Monday. Is it too early to start baking? All total its about 6 double layers. I'm running out of time since I have a funeral now to go to tomorrow.

yes I think so, unless you freeze the cake

i've started baking as early as 5 days in advanced, i just cover the cakes in saran until i'm ready to ice.

Not at all! Bake and wrap twice in plastic, heavy duty foil (I also wrap in freezer paper) and freezer bags and freeze til at least Fri. night( the one due Sun.) thaw on counter unwrapped overnight. Torte, fill and crumbcoat Sat. morning then ice and decorate in the afternoon or evening. Do the same for the one due Mon. take that cake out the freezer on Sat. night etc... Good luck!

In my previous response I said thaw on counter unwrapped. That was an error I meant thaw it wrapped. Sorry.
