I am baking a wedding cake and a groom's cake for this Saturday. I am baking the layers today. My intent had been to freeze the layers, then remove from the freezer to fill, crumb coat, and then decorate Friday night.
But now I am thinking.....can I place my buttercream (and chocolate buttercream) between my layers, stack, and maybe even crumb coat and place in the freezer until Thursday night/Friday morning?
I've always frozen my layers seperately......but was wondering if I could do it this way. Thanks in advance!

I have done that, just wrapped very well in plastic wrap and then foil. They came out fine.

I would love to know this myself, because it could save so much time when in a rush! I have heard different responses to this question in my decorating class....so I would value more input!

Well, since I only had one response, I went with it!!!! I filled the layers with buttercream/chocolate buttercream and have placed them in the freezer. BUT.....I still wasn't totally comfortable with crumb coating then freezing without more responses, so I didn't do that! Let's hope that this works!
