Help! What Am I Doing Wrong.....

Whenever I bake cakes they look great, I take them out of the oven and wait 10 minutes before I take them out of the pan, but when I go to take them out I notice they have shrank some and there is about a 1/4 - 1/2 inch all away around the sides. Anybody know why this is happening? Any ideas and suggestions would be greatly appreciated.

Are you setting the timer so your not over baking? I know that when a cake is done they will pull away from the sides but I've never had one pull that far away.

Also maybe you are setting the timer for the correct time but maybe your oven is too hot????

I always bake at 325 not 350. So maybe your oven temp is off???

Thanks for the suggestions. I have never checked my oven temperature but I bake my cakes at 300. Where can I get and oven thermometer so I can check my oven temp? I will do that and see what it says. Next time I bake a cake I will take pictures to post and see if that helps in getting more responses.

Hello Bradymom6,
I see you too live in the Dallas Metro area. There has been quite a bit of rain and it has been very humid. I have been baking my cakes at 325 for 90 minutes. I know it sounds long and every oven is different but I too had a cake sink on me and once I extended my baking time I haven't had that problem anymore. And no, cake is not dry. thumbs_up.gif

You may want to remove them from the pan after 2-3 minutes.
The cakes continue to cook in the pan, so the sooner removed the better.

You can get an oven thermometer at Wal Mart or most any kitchen supply department. Just a small one that hangs from or sits on the rack. It's very informative.

Thank you for all your replies. I will get a thermometer and check my oven. I will also try taking the cake out of the pan sooner.

Yes, I do live in the DFW area. I have met a few other people on CC that live in our area. I would love to get together sometime and talk cake.
