I am making a baptism cake for a nephew's baptism. I really want my frosting to go on smoothly and have found problems with this when icing a cross cake inthe past. What icing should I use and how do I make it smooth? Also, do you recommend a white frosting for me? icon_smile.gif

I use the snow white buttercream frosting listed in the recipes on this site, it is a prefectly white and good tasting icing. I use the VIVA method to smooth out my frostings, and it works perfectly (the snow white frosting is the one I use all the time on my cakes) If you look in my pics, you can see how smooth I get it, no matter what the shape of the cake. It would work just fine for a cross cake.

I also use the VIVA method.
You put a VIVA paper towel over the icing and smooth with your hand or a fondant smoother.
You use VIVA because it is the only plain flat paper towel out there!
They are great!

Could I ice the cake on Friday and then add the corneli lace on it and words on Saturday morning?

You first ice your cake, let it crust for just a couple of minutes, then take a VIVA paper towel and place it on the icing and gently smooth it out. Move the paper towel over and do another section.....until the entire cake is smoothed out. You can "feel" where the icing needs to be smooth under the paper towel - it is amazing how well it works! DO NOT let your icing crust for very long though, if you let it set too long, it will crack when you try to smooth it out. Just a couple of minutes (3 to 5 ususally for me) The reason for using VIVA is that it is the only paper towel that does not have a pattern on it.

Yes, you could ice it on Friday and then add the rest on Saturday - it would work fine.

Ok, next question. I am using the corneli lace method on the cross cake. I then want to add a rectangular section of icing in the middle to do some writing in it. Any suggestions? Do I just spread icing in the middle in the shape I want and then write on it? Help! icon_smile.gif

That sounds tricky. I think I would outline the section you wanted filled in first so that it didn't get out of control. You could outline the section before you do cornelli lace and do the lace around it.
