Hi i plan to bake my cake tomorrow, the cake is for father day, the customer is picking the cake up saturday nite will the cake still be moist. if i bake the cake tomorrow and decorated the cake saturday morning?
2.when doing the viva method do i need the coke bottle... should i crumb coat the cake then freeze for a few mins, then coat again.... I am trying to do the shirt necktie cake, the customer do not want to use fondant... so i have to get my crusting buttercream, as smooth a possible... thanks in advance...
Your cake will be fine doing it that way. I always bake mine one day and decorate the next - just be sure to keep it wrapped or covered til it's frosted.
I don't know the Coke bottle part, but I have found it very easy to get smooth buttercream just by putting the Viva towel over and lightly running my hands over the cake once it starts to crust - before the crust is set though (of course, this is a very recent find for me - I wish I would have used this sooner!!! ) and now I am a believer ![]()
I think your cake will be fine but what i've done recently is bake my cake on 1 day, crumbcoat, fill and put in fridge then the next day frost and decorate and the cake was as yummy as can be and still very moist even 2 days after decorating. i think if you crumbcoat the same day you bake it holds in the moisture.
viva method i've crumbcoated and then just lay viva on cake and press with my fingers until its smooth then spread the final layer of frosting and do the same. You can let the frosting crust a little maybe 5 mins before using the viva. If the viva sticks to the frosting when you try to smooth then you need to let the frosting crust some more before attempting viva again. I've read that you can also use a fondant smoother instead of your fingers but i havent yet. HTH
