I am thinking about entering a huge competition and am in need of your advice.

Please share the one thing you wished you had know when you entered your first competition. (Or in other words, what is the most important thing to know. icon_smile.gif )

I keep going back and forth right now with entire design. I had started planning since the night i drove from the show. They have the new theme posted that weekend for the next year. I don't want to change out my original plan but trying to find that item that ties them all in os proving difficult!

I am not!! I just was real scared when I went and I don't want to make anyone else nervous! I have shared my thoughts about this with tiptop57. I will give the same advice. Go in thinking you want to win-Reality check upon arriving!! You thought you were good well there is someone better! It is very hard and I was very lucky! Get all your ducks in a row and small details will make you or break you. That small imperfection they will find it. See I feel like I am scaring people now! If anything I learned so much and apply this daily. That small little ding in the icing I always need to fix because I am in competition mode! Have fun with this and the cameras are watching you. No matter where I went they found me. You cannot be camera shy because they want to catch you doing something wrong. Your misery is there on air oops!

You're not scaring us - we want the honest in-your-face truth!

I know the cameras must be always on you because on that OSSAS special the FN did I think we saw you, what - 11 times? Not to mention how many shots of your cake there were!

I can see the little imperfections are always found....the gentleman who did that gorgeous cake based on the Japanese Kimono - the only flaw they found (at least on camera) was the fraying end of one of the ribbons. That was such a shame.

Any other pearls (fondant, gumpaste or otherwise) of wisdom you care to bestow? Since you seem to be the only Competition Celebrity we can get to talk to us!!! icon_lol.gif

You are too funny! I know I think the camera guy was stalking me and at last count it was 11 plus times! Ha Ha!

What would you like to know about? I still am learning about fondant. They wanted my fondant to be smoother. I know that I get a better result when I knead it a million times! Elevate ia best to keep from puckering. For smaller cakes I roll out on a Silpat and larger I have a big piece of plexi. And I always use pan coat (grease) so it does not stick!

Any other questions?

I really, really, really appreciate your words of wisdom for OSSAS. I am not trying to ring you dry of every thought. And I have truly enjoyed our conversations.

There are lots of veterans here at cake central and I want advice from as many people who have ever entered a competition as I can get. Also, I am going to be entering the Dan Patch competition here locally at the state fair grounds and I want tons of advice from everyone that has ever entered a competition. icon_biggrin.gif

So veterans, send me your advice!

It is hard to get people to talk when it comes to this particular competition I think. part of the agresive nature I think! I had planned on entering the fair competition a couple of years ago but at the time I was working as a pastry chef and did my trade for money. Good luck there seems to be a good turnout for that!

So they give you something that tells you how they scored you and why? I was wondering this while watching the show for about the thousandth time! Your cake was beautiful! I kept looking at all of the other cakes and people and wondering if they were CC'ers.

We get a sheet of good things and things we should work on. They are based on a 100 point scale. You can fall into a range of numbers and these determine if you receive a certificate. The higher scores place in top numbers.
