When you are baking a doctored mix with pudding, chocolate morsels, etc. in it and the baking directions on the recipe are different from the cake pan instructions from Wilton, which one do you follow for baking time and temperature?

I always follow the pan.
It is really hard to check a cake to see if it is done when it has chocolate morsels in it.
You need to make sure the cake bounces back when you touch it.

Seems to me that you have to follow what the ingredients need most. Then, if say you have a very large pan, maybe you will have to turn the heat down after a while and bake longer.

AmyBeth, I've tried to follow what the Wilton book/pan says and my cakes end up being somewhat shaky in the middle and I have to bake them longer. Sometimes I end up with a dry cake that way. So I didn't know if I was doing something wrong or if it was just trial and error, moreorless, for each recipe.

I usually add anywhere to 5-15 mintues baking time for doctored mixes--it all depends on what size cake pan I am using and what temp I have the oven set for. For me it was really learning my oven and that took some trial and error.
