I made my son a birthday cake and he wanted lemon filling. As suggested in a recent topic I used the snack pack lemon pudding and mixed a little icing with it. My son said the cake was very good but the filling was a little to sweet. Any suggestions for the next time?
I always use homemade lemon curd. Either of these recipes are great.

i found that if you just use the Jello lemon pudding mix made using the piefilling directions it turns out great. Just make sure that the pudding is completly set and not runny. Sometimes i add a little less milk then on the directions. This is usually the filling i use for all my cakes, and it comes in just about every flavor so you cant go wrong. I always fill my cake then put it in the fridge, and it makes it easier to ice and the pudding stays put. (also, try only putting filling to about 1 inch from outside edge, filling will spread enough and won't ooze) Hope this helps.
