Can I make marshmallow fondant a few weeks ahead and freeze it, or should I refigerate it, or will it dry out and be no good

Don't freeze or refrigerate it! Just wrap it tightly in saran wrap with a touch of crisco on it and then put it in a airtight container. I have also vaccuum sealed mine and it works great!

I just wrap tightly in saran wrap and place in a heavy duty ziploc.

I also store my colored leftovers the same way...wrapped in saran and place several of them in one of those gallon zipper bags with the air squeezed out.

Just unwrap and warm in the microwave when you're ready to use it...DO NOT OVERHEAT!

edited to say that I store it in the cabinet in my kitchen...lasts a very looong time!
