Hi all,
I am making a Yellow Amaretto cake with raspberry filling wedding sandcastle cake and I need a "not too sweet" frosting that will not only taste good but will hold up well unrefrigerated indoors with AC for 24 hours. There will be crushed Nilla wafers covering it as well. This is in Florida in mid June.
Any suggestions?

A few questions though,
What is crème bouquet? Where can I buy it?
Where do I find the 6x sugar, HiRatio Shortening and Icing Base Brite White?
I don't recall seeing any of those in my normal shops.
I'll be trying them if I can get the stuff.
