Hi!
I just made my first batch of chocolate ganache and had a question..
when used as filling, do I have to refrigerate this cake? I was going to use it in a cake that will be fondant-covered so it may not be the right choice..

The Cake Bible says ganache can stay out for I believe 3 days. ( I don't have this book with me right now) but that is the reason I use ganache a lot, besides it is so delish!!!

I've never had a problem leaving ganache out for a couple of days when used as a filling, or even as a coating, for that matter. Can't wait to see a picture of the finished product!
