Freezing Decorated Cakes

Okay, so I just got asked to make a cake for a coworker's daughter who is graduating hair school. The problem is...the party is June 16th. I leave for vacation June 13th. I know it wouldnt be fresh 3 or 4 days later. Can my coworker put the decorated cake in the freezer until the party to keep fresh? Or wil that not work??

Is it fondant or buttercream? If it's fondant, you can just wrap it tightly and freeze it. With buttercream, it may work if you freeze it unwrapped for about a half an hour to "set" the decorations, then wrap it very gently in several layers of saran wrap/foil. Someone else may have more experience than me, so here's a bump icon_smile.gif

I think it will mostly be buttercream with some small decorations in fondant. Thanks for the ideas! Maybe ill do a trial run on a small cake this weekend to see how it goes. Thanks for the bump!

I was told by another lady who does cake decorating that you can put it in a box, wrap the box with saran wrap and foil and then freeze it. When you take it out, don't unwrap it until it is completely thawed and she says (I haven't tried this so don't hold me to it), that the condensation will form on the outside of the box and not on the cake. You may give it a trial run and see how it goes.

I froze a completely decorated cake once. I put the cake unwrapped in the freezer until it was completely frozen, at least 4 hours, then gently wrapped with wax paper, then with foil. Very gently. Then when it time to use, unwrap it while still frozen and let it defrost for at least a day in the refrigerator, not on the counter(too much condensation would build up otherwise). It was just fine.

I was in this exact same situation a month ago! My SIL paid me (I only make freebies for the kids!) to make a cake for her BF for the 11th April, but I was going on hols on the 9th. It was a fondant covered cake and when it was ready I put it in a cake box, double wrapped the box with cling film (saran wrap) and put it in her chest freezer. I told her to take it out the day before his birthday and let it defrost in the box without unwrapping it. The cake came out perfect and her BF loved it so much he refused to share it (though he begrudgingly gave his mother a slice!). Its the boxing glove in my photos (he even ate all the bright red fondant!)

Wow, your boxing glove is awesome!!!! Now that is some talent!!! Thanks for the tips everyone on trying to freeze my cake, I will let everyone know how it goes when I get to do it.
