Question On First Doctored Cake

hi e1,
I did my first doctored cake this past weekend. I added box of instant pudding, extra egg, and milk instead of water. so it was 4 eggs, 1 cup of milk. I noticed it was a bit thicker than normal cake batter. Is that how it's suppose to be? should i add a little bit more milk? Also it was a bit yellowish to me. You think it would be okay if i did 1/2 egg, 1/2 egg white (2 egg, 2 egg white) and a bit more milk?

Adding the pudding is going to make it a little thicker. What flavor cake mix and what flavor pudding did you use?

I would just leave it as is. I have made many doctored cakes and that is how I like the batter to look icon_smile.gif. If you want, you can add a little extra milk and maybe some extra vanilla. Good luck!

That is exactly what I use and it comes out great. And like strawberry0121 said if you want you can add an extra splash of milk or add some vanilla. Let us know how it turns out!

i used white cake, and box vanilla pudding. the taste was fine, i just want it a bit more white in color. thats why i was thinking 1/2 egg, 1/2 egg white.
when you say add vanilla, do u mean vanilla extract?

If you want a WHITE cake, then only use the egg whites, no yolks, and the vanilla pudding is going to give it a more yellow color, too because it is yellow. I'm not sure if there is a white pudding mix or not, sorry, but you could add a cup of sour cram or buttermilk instead of the pudding to get extra moisture.
And yes, vanilla extract, but you can use a clear vanilla so that it won't affect your cake color.
I think there is a Brides white Cake recipe in the recipe index that could guide you on the type of ingredients you might use in a doctored cake mix.
I have read that it is pretty difficult to really mess up a doctored cake because there are so many leavenings in them. So, have fun and good luck!

There is a white chocolate pudding mix. I've used that before and it's great.

another thing i like about the pudding, it gives it flavor. im about to try out the banana cream pudding.
