Filling Spoilage And Ribbon Questions

I have an order for a cake this weekend with this pineapple filling http://www.cakecentral.com/cake_recipe-735-2-Pineapple-Filling.html which by the way, is phenomenal. Anyhow, it has an egg in it, does the cake need to be served cold? How long can it sit out before it will get people sick? Can I just cook it a bit longer? Also, could I sub the egg for mirengue powder to avoid the egg situation?

Then on this same cake the lady wants a ribbon border. Because of the filling the cake will have to be refrigerated until I deliver it. It will sweat a bit, how will this affect the ribbon? Can I buy a special kind that can hold up to the sweat? I will be lining the back with wax paper, is that enough to prevent any sweating on the ribbon issues or will it make it worse? help help help!!

i don't think that filling would need to be put in the fridge. IMHO, anyway.
