How about hmmm boiling down some sweetened coconut in coconut milk til it's thick like jam for the macapuno and maybe even subbing out the purple yams for the ones we have the orange ones. It would still be a lovely color (gold instead of purple). I don't know what macapuno is sposed to be like is it moist like a jam or is it like the flaked coconut that is sweetened n dry? I am wondering. If it's the moist type like jam I think the idea of reducing it with the coconut milk sounds like a good idea or even add more sugar to it too. I'll have to experiment on this one. hmmmm.

Macapuno is young coconut cooked in syrup. It is thick and sweet usually sold in bottles. I've search the internet for ube cake and found this cake picture.
