I finally found instructions on how to make a topst turvy cake, but the problem is i dont need it to be 3 tiers, and i am not sure how to go about doing that. If anyone could help i would appreciate it! I only need it to feed about 50 people. Also where would I find the 7' and 9' and 11' inch pans that the instructions call for? I have contacted the local stores here and no one carries them?HELP PLEASE!
If you don't need it to be three tiers, how many tiers do you need it to be? 2? You don't have to use the size pans they use in the instructions. You could use any size pans you want - all it would change is the actual size of the cake - if you need to feed 50 you could a 10" and a 12" - those are figuring in some good size slices - you might get away with an 8" and a 10" if you make the slices small. Hope this helps at all.
You could also do a dummy cake if you want to get the look of the 3 tiers without wasting cake.
okay thanks, thats a good idea. I have been through all three wilton classes, but i have never even seen one of these cakes, until i was watching the food network the other night! One more question....when i cut the cake at an angle, i can use the other half too, right??
I've done 2 topsy turvy cakes so far and I love to do them. They are so much fun and when you put it on the table in front of the family - no one has ever seen them and they are always thrilled.
Both of my topsy turvy cakes were small. The firs was made with two 8" cakes with the top cut at a diagnal to create the affect, then there was a 4" dummy, followed by a 6 inch cut at an angle then topped with a 3 inch that I baked in a soup can.
The second was the same except the bottom layer was only one 8" cake.
My point is, you can make them with any size pan and just get creative about how you cut them and how you stack them. And to add height , just throw in a dummy.
Both my pics are in my photos - I don't know how to paste them here, but take a look. I can't wait to try a larger one, but so far, I have only needed smaller cakes for small gatherings.

I saw him do this cake as a demonstration and his tutorial is an exact replication of what he does in person.
Print it out and follow it to the letter--that's how I made the one in my photos. One thing I didn't have was the "single plate system" that he uses. I had to wing it with Wilton hidden pillars (the large bore plastic dowels) and "plates" cut from foamcore that I hot glued to the pillars. It worked pretty well.
If you can't find the odd sized pans, you can cut those sizes out of pans an inch larger than required.
