Oh - I have four half sheet cakes for Thursday. This is the biggest order for these I have ever had. Would it be okay to start baking today, wrap up, and put in fridge until Wednesday morning? I will pull them out and let them sit out Wednesday morning and decorate Wednesday evening.

I have never started this early before - I am just worried about not getting them all done!

I would start baking today. As soon as you remove the cakes from the pans wrap them tightly in plastic wrap (BEFORE THEY'RE DONE COOLING). They should be fine on the counter. Brush them with a simple syrup before icing to keep it moist.

I would also start today, & wrap them warm, & leave them on the counter thumbs_up.gif For weddings on Saturdays, I bake on Wednesdays and use the same process.

I would get your frostings and fillings made today and bake your cakes tommorrow. Wed. for decorating.

I agree totally with ladyonzlake, you should make your supplies for the cake today, bake tomorrow, then leave everything for wed. Good luck, and can't wait to see them!
