Don't wait and let this opportunity pass by. It came to you at this time for a reason. You can only go up from this experience. Just think, you might be kicking yourself in in the head a few months from now because you did not take them up on it. It's what you wanted and just because you say yes now doesn't mean that it's forever, either. Go for it!
Go for it! Keep all your cakes simple in the start and then when you get your feet wet start experimenting and trying new things. Some of the best cake designers never even took a class. You have a great opportunity...dont let it pass.
Go for it!!! if you try it out and decide that it is tooo fast for you then you can either mention it to your boss and maybe he will hire someone to help you or you could quit. But I would do it esp. if you are thinking about opening your own business. I would be more likely to go to some who worked at a great company who made cakes then someone who is just starting out. I hope that makes sense.

No question. . . GO FOR IT!! Nothing ventured. . .nothing gained!! Especially if this is what you want to do . . .someone is willing to give you a chance, it might not come along again for long time.

Like everyone else here I'll say GO FOR IT!. I think that it is even better the fact that you would be alone in the cake department. I was in the same boat once ( it was a donut place) and I understand that it will be scary at first. But this will give you the opportunity to practice a lot on somebody elses expense. I promise that you will only get better.

I have this problem too. I'd have to have a separate kitchen and it would have to be built a certain way and then inspected. I've heard of decorators renting kitchens although I don't know much about this. Also have heard of using a church's kitchen for making wedding cakes and such. I've decided the next big cake I do will be done at my church, pending their approval and maybe a little donation!
More hassle, but then again, more space and my kids wouldn't be distracting me, so I'd probably have much better results.
