I havent worked with fondant, but I'd like to try. My course 3 was cancelled and I dont know when it will be offered again so I just want to try and teach myself the content of course 3. Anyway I was thinking of making the MMF. I have a few questions. HOw long can you keep it? Should it just be stored out of the refrigerator in an airtight container? How/when do you go about tinting it? Can you make up a batch of white and tint little bits in different colors? What do you use to attach fondant to fondant? Does it dry hard, or is it still flexible? How long in advance can you make fondant accents like flowers, bows etc? Any other tips would be appreciated! Thanks

Ok, I'll see how many of these I can answer for you....

1...how long can you keep mmf? Wrap it tightly in several layers of plastic wrap, stick it in a ziploc bag or airtight conatainer, and it can last forever, just be sure to look for mold before you use it...I've had some for almost 6 months, and it's still good.

2...tinting...if you want to entire batch to be the same color, tint the melted marshmallows, then add the sugar. If you want small amount tinted different colors, make white and knead in the colors with some Crisco.

I usually use a little water to attach mmf accents to mmf

Depending on how long it sits out, it may get hard, but I did a wedding cake totally in mmf a couple weeks ago, and it sat out all night and the morning of the wedding and didn't get a bit hard.
