I have a lady that wants a small mad hatter cake for dtr's BD. Only for family of 10 that cuts family-size servings and not the traditional 2 X 2.
I figure bottom layers will be 10-9-8 (top to bottom), next layers will be 7-6-5, top layers 4-3-3.
Stay with me, folks...I know the smaller cakes will be harder to do--if anybody has experience with the smaller size hatter cakes, advice will be greatly appreciated.
Also, what about a price for this cake? It will be covered in BC with fondant accents. I was thinking $50-$60...do you think that is too high?
Assuming you will get at approximately 25 servings I think you are a bit low. IF you really do get 25 then I would price it at $87.50($3.50 serving) and I am in a town of about 30,000 in Ia. Not sure how big longview is but if it is a bigger city then I say you could probably even go as high as $5/serving.
It is a whimsy and fondant. Whimsy alone is challenging enough.
If she is only needing 10 servings, I think you should keep it to 2 tiers maximum. You're being WAY too generous to do 3 tiers. Put a cupcake on top or a sugar bow or something if she wants it bigger.
Here's a 2 tier version I did a while back for 8 people. It was a tiny 4" and 7" I think, too much for so few people still:
I was definitely thinking only 2 tiers but Mom said dtr found a pic (orginally 4 tiers) and wanted to leave out bottom tier. I don't think they realize the actual size of the finished cake.
Longview is a town of about 85,000, but cake prices here are LOW. That said, only 1 other specialty baker here in town will make the whimsical cakes and she is booked.

I haven't made one of these, but they look like they are very time consuming. I would price it like, if not more than, wedding cakes. As you said, if only two people in the area do them, if she wants it bad enough she should pay a fair amount for it.
I don't think I'd do it for less than $75. How much is it going to cost you to make it? Use that as a base.
If she doesn't want to pay alot for it, then give her a price for the a 2 tier version, and let her pick. Personally though I think 3 tiers really give a good illusion, that sometimes you don't see in the 2 tiered ones.
