Should I Cut It?

When I make a cake I usually just ice it as is. However, I have noticed on Ace of Cakes and other shows that the sides were all trimmed. I assume it's to make the edges more even?

Should I be trimming my cake before icing? Or, just leave as is? Do I put filling in before or after trimming?

A lot of what goes on at Charm City Cakes is custom shaped - they are more likely to bake lots of sheets and cut them down to what they need than try to bake in a million funny pans. I would bet they don't cut the basic cakes like rounds.

Just before I ice my cakes, I make sure there is nothing jutting out farther than the cake board to make my life miserable. For rounds, I just trim those spots with scissors, and for squares I use a serrated knife.

I always trim my cakes, it makes them super even and easier to ice. It also takes off dry edges and turns rounded corners into sharp ones on the rectangles and squares. It's easier to do when the cake is frozen, but it's nice either way. I trim it before filling it, it will get messy otherwise.

For me it depends on the cake if it is a little dry on the edges.
