am always working with whipped cream frosting because my clients only want whipped cream I never use buttercream frosting, and was wondering any tips on useing whipped cream frosting or decorating cakes with the frosting anybody who like me that only use whipped cream frosting to decorate cake for clients? icon_smile.gif

I use a lot of whipped cream icing as well, that's what my family likes, because we don't like the sweetness of buttercream. I find it quite easy to work with, but a problem I run into is because of my warm hands. I tend to melt it as a I pipe, so I have to be careful when I get to the end of my pastry bag, because it comes out as liquid after some time. Other than that, I have no problems. I've put fondant flowers on it, with no problem, and can do scroll work and small piping very easily. Easier than that with buttercream, because it's so smooth. Hope this helps. icon_smile.gif

Me too. I love whipped cream (minus the stabiliser please)......when come to decoration like roses, I will whipped a little longer to get the consistency to pipe roses. One of my cake in my photo gallery (yellow & pink roses) uses whipped cream...I will do it in an air-con room and immediately transfer the finished product into the fridge after that. icon_biggrin.gif

This is a very interesting topic for me at the moment. All the cakes that I have been doing lately is buttercream but on the odd occasion I have used whipped cream. The problems I have is that I am too scared that I am going to over whip the cream and then just have a blob of butter. And the second thing is that the last time I did a cake the cream did not whip to stiff peaks no matter how long I whipped it for, it was really frustrating.

Also, can one do whipped cream but using some buttercream for the decor?
Sometimes I used two different colours to achieve a specific colour but with buttercream you can mix for a while without worrying but with cream I'm not sure.

What do you use to colour whipped cream and when do you add it?
