Ok I have an order for a cake that has the pieces marked out in the frosting. They would like to have me mark the pieces out in the frosting and then a flower in the center of each piece. Can anyone help me on how to do this so each piece is proportioned just right?
Some cake decorating stores have a piece of plastic made just for this purpose. I don't know how much it costs.
The ruler idea would be the cheapest way to go. You could "enhance" the lines with piped buttercream, kind of giving it a quilted look.

I had to read this twice to understand what you were asking. Ii is called a scored cake. If you seem to be getting alot of this type of orders there are icing markers out there that will help you out tremendously. I got mine from Kitchen Krafts. They come in several square sizes. It is so much easier to lay this large plastic down and let it mark the cake. All you need to do after is do the borders and flowers in the middle.
I have to do 5 scored sheet cakes next week. I let the icing crust and take a long wooden dowel (found in craft stores), rub it a little with powdered sugar and press into the icing where I want the score marks. Then I'll be putting a little rosebud in each serving. People love these because they know EXACTLY where to cut!
