OK so I'm getting geared up to try MMF finally. I've been very anti-fondant since Wilton Course III and to tell you the truth, I've become more than a little curious about all the fuss made over MMF here in the forums.

So to that end, here are my questions so far:

1. At what point do you add the color? Can you add it in the beginning before melting the marshmallows? Or should you really do it after it's all mixed and rested, like Wilton fondant?

2. Can MMF be used to make sugar flowers, like I've used Wilton fondant with my gumpaste kit before, it works OK but can MMF also be used? (I'm looking for a more economical way to practice flower-making)

3. Can MMF go through a pasta machine like Wilton fondant does?

4. What are drying times for making objects out of MMF compared to Wilton?

5. What are the chances that making MMF is going to kill my KA? I already have trouble with the engine straining and/or skipping when I use it to make bread.

I'm sure I'll have more questions as I get into it....

1. If you are coloring the entire batch - you can mix it in with the melted marshmallows. If you are only tinting a small amount, do it after it has rested.

2. You can use mmf to make anything that wilton fondant can make. Mix it with gumpaste, 50/50 for good results.

3. Yes, I use mmf in my pasta machine all the time.

4. I think they dry in the same manner. If it would usually take 2 days for something to dry with wilton fondant, it should only take 2 days for mmf.

5. I make mmf in my KA all the time and it has never had any problems. Once I figured out the right texture, it was a snap.

Another tip - use lots of crisco to coat everything. Your hands, the table, your utensels, etc. Aslo, when you let the mmf rest, coat it really good with crisco and that will help keep it from drying out.

OK I will take a stab at this one...

1. I really think it is much easier to add the color to the marshmallows after they have been microwaved, but before adding the powdered sugar, however I rairly need that much of one color, so I either make it all white and kneed in my color later or make a mini batch of each color I need.

2. Yes MMF can be used for making flowers. Almost all of the flowers (and bows) I have made have been done with MMF. I understand it will dry faster and harder if gumtex is added to it but I have never tried it. I have however mixed MMF and gumpaste 50/50 for something I needed to dry really hard ( brim of cowboy hat)

3. Yes it can go through a pasta machine

4. I don't know I don't EVER use Wilton I don't like it

5. I have never made MMF with my mixer. I always do it by hand. I have gotten it down to a science now and rairly even make a mess. I nuke my marshmallows in a really big bowl. Then I sift my p. sugar into it and stir it as long as I can with a big spoon. When I can no longer stir it I let it cool a little while. I find if it is hot it is sticky. When it is just warm I turn it out on my counter and crisco my hands alittle and finish mixing. I almost always get all the p. sugar in it although I have read on here that most people don't. So don't worry about it if you don't. I then let it rest. I think it is easier to work with if you do. You don't have to though.

LOL LOL Well that is what I get for going to check out the wedding cake challenge for one minute on TV!! DH was yelling "You gotta see this" So I ran for the TV!!

OK here is another MMF question. How long will a batch of MMF keep if it is tightly sealed in plastic wrap? What is the shelf life?

That's funny - when I come in here to check posts while watching Cake shows, my DH starts yelling "if you don't get back in here and watch this thing, I'm changing the channel!!!" icon_lol.gif

I have a tv in the computer room! icon_wink.gif MMF will last a very long time (a couple of months if you store it airtight!)

I guess it varies from person to person - but this is how I do it....I've kept leftover mmf for several weeks - but then only use it for parts that don't get eaten. If I'm covering a cake - I wouldn't go much over a week or so. I usually use the older stuff for covering cake boards - but that's just me.

I don't have any glass microwavable bowls, can I use plastic microwave safe bowls?

As far as shelf life goes-It is marshmallows/p.sugar and water-What could go bad? OK so I have a running experiment-left overs are kept for my dogs medication(whole other thread LOL ) every once in a while when I break off a piece for him I get a piece for myself. I have yet to taste a difference from day one until it is gone.
